With as much naked wood as a Western saloon and a cellar focusing on quality, this sophisticated wine bar is a real find in Melbourne’s CBD. The list is a collaboration between Australian winemaker Patrick Sullivan and French natural wine expert Eric Narioo. Not defined by geography or style, it includes everything from Spanish cava to Mornington Peninsula pours that rarely make it beyond the maker’s friends. Chef Dave Verheul’s small plates focus on flame grilling and fermenting, including sour cucumber dusted with dill. Embla is perennially popular, but they do accept bookings for lunch.
