Now located on the 55th floor of the Rialto Tower, with views from the Docklands to the Dandenongs, the third iteration of this legendary restaurant is the most theatrical yet. The fitout – lashings of kangaroo leather and local stone – hints at the contemporary, localised approach of Shannon Bennett’s (formerly a judge on MasterChef Australia) latest tasting menus. While his technique still has its roots in classical French cooking, the ingredients are increasingly Aussie. Native oysters are fragrant with lemon myrtle, sea urchins served with bunya bunya and marshmallows arrive alongside glowing embers to be toasted at your table.
