Now located on the 55th floor of the Rialto Tower, with views from the Docklands to the Dandenongs, the third iteration of this legendary restaurant is the most theatrical yet. The fitout – lashings of kangaroo leather and local stone – hints at the contemporary, localised approach of Hugh Allen's tasting menus. While the technique still has its roots in classical French cooking, the ingredients are increasingly Aussie, with a purée made from macadamia with kelp oil and west Australian marron tail glazed with Tasmanian mountain pepper and smoked butteron.
