‘Love, Eat, Share, Smile’ is the ethos behind the L.E.S.S. acronym, which took over the Bruges premises of fine-dining Hertog Jan when it re-located to the outskirts of the city. Here chefs Gert De Mangeleer and Joachim Boudens are offering a more informal approach than they did at Hertog Jan – and one that is conspicuously contemporary in chocolate-box Bruges. Choose from sitting at a chef’s counter, communal table or smaller, conventional tables for menus inspired by the chefs’ global travels, with an emphasis on Asia, and dishes made from North Sea fish and seafood the highlight.
