After turning his hand (and his kitchen knife) to nearly every area of hospitality, from food trucks and pop-ups to hotel kitchens and Michelin-starred restaurants, chef Sam D'Huyvetter has focused his skills on cooking up the perfect piece of meat, or fish, at Bar Bask. As a Basque-inspired grill restaurant, hence the name, nearly everything is skewered and grilled on an authentic asador, from smoked hay butter-aged guinea fowl raised on the restaurant’s farm, to Bar Bask’s signature turbot, grilled whole and served with a pil pil-style vinaigrette made from white wine, cider and olive oil. On the wine list is a thoughtfully curated selection of European biodynamic wines and classics with a twist, and if you want something really interesting, ask about the “special book” to see the rare bottles, unique vintages and excellent champagnes the restaurant has been collecting over the years.
