Tiny, minimalist and famously unpretentious, the 24-seater Oak is not only one of Ghent’s most in-demand restaurants but also one of its most laid-back. Brazilian chef Marcelo Ballardin – who will often greet guests in person – creates tantalisingly inventive menus fusing local ingredients with Asian spices, Mediterranean herbs and nods to South America. Lunch offers a choice of three, four, five or six courses, while dinner is either six or seven. From the generous amuse-bouche to the freshly baked little madeleines served with coffee, no opportunity to delight guests is spared.
