Cozinha Tupis
Belo Horizonte, Brazil
The redevelopment of Belo Horizonte's previously unlovely Mercado Nuevo in 2018 breathed new life into the city's restaurant and bar scene, with thrilling start-ups popping up in the market's hatches. Cozinha Tupis is one of the best of the bunch, opened in partnership with local brewery Cervejaria Viela and helmed by chef Henrique Gilberto. Its market location comes in handy when it comes to sourcing produce, with the menu changing daily. There's usually an unctuous slow-cooked stew on offer alongside some lesser-used offal cuts like pig's ears and trotters and twists on Portuguese and Brazilian dishes like Xodo: green corn fritters topped with sage-spiked béarnaise, spiced cheese and Japanese furikake, making an outstanding drinking snack to enjoy with a cold beer. Don't expect formality though, there are a few tables but even fewer frills and food orders are called out by megaphone.
