Perfecting his knife slicing and soy dressing, Rodrigues works within the philosophy of kaizen, which loosely means 'change for the better'.Fans of fresh fish can either keep it casual on one of the streetside tables or they can be whisked upstairs to the bar and get in on the action. As one of the best seats in the house, it’s also where to come for the chef’s choice. The omakase menu ranges from wasabi-brushed sushi to delicious sashimi (all sourced from local fishers) plus special inclusions, too. Ask for sake to pair with; the team knows its stuff about and the long bottle list is almost as excellent as the food.
