Highwayman

Halifax, Canada

Named after the Alfred Noyes poem, Highwayman is a contemporary American cocktail bar with an old European soul. Housed in a historic mid-Victorian Italianate building in Downtown Halifax, the beautifully moody space still bears the original high ceilings with tin tiles, which were preserved to help the decor hark back to the 1800s when the building was first erected. With Spanish-inspired flavors leading the food programme, which also celebrates the fresh bounty of local Nova Scotia seafood, it is no surprise that the cocktail menu begins with an inventive G&T section that pairs different types of gin with different accouterments. The rotating seasonal drinks list is small but well-curated and the bartender's choice and rotating barrel-aged cocktail option serve as icing on the cake of Highwayman's well-rounded drinking selection.
