Set within the Fairmont Pacific Rim, this flagship restaurant and bar claims to showcase the new Pacific Northwest through accomplished and inventive dishes and drinks. The place has a real sense of humour too, with house cocktails including the Rye 'n' Reynolds: rye, cognac, amaro, cascara, nectarine oils and house Reynold's bitters, alongside signatures like The Botanist Martini, which mixes a coastal gin blend with house vermouth, seaborne tincture, oyster leaf and vegan caviar.
