This Guangzhou bar simultaneously celebrates China’s long history of spirits production while taking a thoroughly modern approach to cocktails. From the team behind forward-thinking Guangzhou bar Hope & Sesame, SanYou brings the same innovative approach to drinks creation, making use of an array of techniques such as fermentation, distillation, molecular techniques and more, entirely made with local spirits and ingredients. There’s an impressive selection of Chinese spirit baijiu – with 400 bottles at last count – accompanied by numerous other Chinese spirits, including rice wine, local gins and whisky. The cocktail list itself further champions local, with a recent iteration inspired by the historic Guangzhou district of Panyu. The bar’s name cleverly forms the character representing alcohol, as well as making reference to the concept of happy hour, which the team hopes to introduce to a Chinese audience.
