Located a 15-minute drive from Hangzhou – during which time concrete makes way for sprawling tea estates – Longjing (or Dragon Well) Manor is set on a glorious hilltop property marked with a huge stone carved with the restaurant’s name in Chinese. Rather than communal dining, the interior features eight air-conditioned private rooms overlooking the verdant gardens. Chef-patron Dai Jianjun is a pioneer in China’s Slow Food movement, sourcing much of his produce from his own 20-acre farm in South Zhejiang and placing great emphasis on the relationships he forms with local farmers and makers. Each meal begins with a bowl of soy milk made in-house, either salty or sweet, and then continues with intentionally simple, perfectly flavoured home-style family favourites, including Mum’s Pork, slow-cooked and served with a preserved egg, Lake Turtle Soup, and Fish Swimming in the West Lake, with a black carp presented as if still swimming.
