Tucked between Cat Street’s famous antiques shops, Mora celebrates a different kind of Hong Kong heirloom: it’s heritage ingredient, soy. Charting its long relationship with Chinese cuisine, Asia’s Best Female Chef 2015 Vicky Lau’s six-course tasting menu (and five-course lunch menu) returns the plant-based protein to prominence, highlighting the diverse flavours, forms and textures that can be extracted from the humble bean. This latest project from the owner of Tate Dining Room is more intimate than her previous restaurant: the calming, curving interiors match the colour of her star ingredient, with tofu-hued walls balanced by green velvet banquettes that seat 28. As any good tofu joint should, the restaurant produces its own soymilk, using a unique extraction method that allows head chef Percy Ho to explore innovative new avenues with the ingredient. Changing seasonally, dishes play with soy’s many forms: cold lobster noodles arrive bathed in a soy-milk bouillon, thin sheets of tofu skin coddle a mackerel and cuttlefish mousse, and Lau’s favourite, a signature Mora mapo tofu, takes the ingredient to fiery heights.
