Most dishes are designed for sharing, in the fashion of Chinese neighbourhood restaurants, a format that Pairet believes encourages a family like atmosphere and challenges preconceptions about how Western meals are structured. Recently, the food has undergone a sea change, focusing on seafood and grills. Acquariums line the room, where guests can select some of the finest crustacea in Shanghai.
