Sichuan cuisine’s fiery spice-salt combination of peppercorn and chilli oil can be overwhelming for the uninitiated or faint of heart, but not so at Shanghai’s Yu Zhi Lan, where flavours are nuanced and delicate and presentation is exquisite. Housed in an imposing villa in the downtown area, a minimalist decor forms a soothing backdrop to the bespoke dinnerware on which the dishes arrive – designed by chef master chef Lan Guijun and produced in Jing De Zhen, China’s porcelain capital. Chef Lan sends out set menus bursting with superb local produce, including signature dishes such as chicken feet with pickled peppers, rainbow noodles with spicy razor clams, and whisker-thin silk noodles – made with duck egg yolk and without any water added. The original version of the restaurant can be found in Chengdu.
