The main focus may be food at Carmen in Medellín – rightly so with executive chef Juan José Cardenas’ focus on Colombia’s culinary traditions and its rich biodiversity – but that doesn’t mean that cocktails take a back seat either. Taking a similar approach, bar director Maycoll Tobon makes the most of the country’s diverse regional ingredients to create an inventive selection of cocktails. The beautifully-illustrated menu contains gems such as the BCE, based on tequila infused with panela and chipotle, while vodka-based La Chicha contains pineapple pickled in plantain vinegar and mirin. The bar team make use of an array of culinary techniques to create their drinks, as well as adopting a low-waste approach. The venue itself, located in the city’s El Poblado neighbourhood, is refined and intimate, with a few distinct spaces including a leafy courtyard and a conservatory to sip in.
