After graduating from San Francisco culinary school, Carmen co-owners, Carmen Ángel and Rob Pevitts, landed in Medellín and kick-started the city’s emerging culinary conscience. Now proprietors of a small restaurant empire – including next door’s Don Diablo steakhouse – the duo’s first establishment retains its high acclaim under the leadership of Juan José Cardenas, who has embraced the experimental ethos of the restaurant’s adventurous owners. Take a seat in one of three dining spaces – a wood-filled bar, a lush conservatory or a leafy courtyard – to dine on modern bistro dishes bursting with Colombia’s biodiverse ingredients. Pick from a seven-course tasting menu or the reasonably priced a la carte offering. Past plates include pork chorizo with tucupi aioli, Caribbean blue crab with soursop relish and Pacific coast fish on coconut rice risotto. Round off the meal with a Colombian take on a fruit salad, featuring sorbet, coconut crumble and fruit escabeche, or head to the bar where Maycoll Tobon celebrates the country’s flavours through indigenous distillates. His drink of choice? La Chicha – a rum and vodka pour with pickled pineapple.
