Don’t be fooled by the laid-back feeling of this bistro in Quito, Clara is crystal-clear in its vision and execution of some of Ecuador’s most exciting dishes. A trio of chefs are behind the eatery, which earned the One To Watch Award as part of Latin America’s 50 Best Restaurants 2024: Felipe Salas, Venezuelan-Portuguese pastry chef Ángel De Sousa and Spanish pastry chef Ana Lobato. They joined forces to open the venue in 2023, helping to lead the charge in Ecuador’s culinary renaissance. On the menu at Clara are Ecuadorian classics with a modern spin, giving careful attention to the exemplary produce of the surrounding country. Signature dishes include a ceviche-like tomato and crunchy pig’s ear salad inspired by the classic street-food cevichocho and an omelette paired with Afro-Ecuadorean-style coconut bisque. Desserts, created by De Sousa, are just as mouthwatering, with the chocolate tart – made with 70 per cent Ecuadorian cacao – a notable highlight.
