Worship at the altar of meat at Tributo, which harnesses the power of fire, with suitably warm hospitality to match. The team is something of a powerhouse, the self-named "tribe" led by chef and butcher Luis Maldonado, whose respect for Andean cattle verges on the religious, with Andean cook and Kosher chef Manuel Aguzzi as sous chef. The menu is creative, cheeky (literally) and decadent: we’re talking a starter of slow-roasted beef sweetbreads finished with butter and lemon, and mains such as cow's cheek with red wine and tonka bean, sweet potato purée and white-chocolate macambo. The wine list is as robust as the cuts, with top-notch local and international vintages plucked from the top-floor wine ‘cellar’. To finish, don't miss the palate-cleansing Coconut Ashes, with coconut ash ice-cream, coconut mousse, crunchy coconut ash and green mango.
