Part retro bistrot, part futuristic lab, Abstract is a bar like no other. Drawing on the art movement of the same name, the venue offers multiple settings and experiences within one site, formerly a tabac shop in Lyon. The bar doesn’t buy its spirits, but rather produces them in-house, using a single element at a time to create mono-ingredient-distillates – what the team term Monochromes. These are produced in the brutalist-style lab, highlighting the complexity of each ingredient and provide the basis for the venue’s exceptional cocktails, which are either reinventions of classic cocktails or French bistrot-style drinks such as the Galopin Picon (made with picon – caramel-coloured bitters famous in north and east France). These can be enjoyed in the lab, or on the other side of a glass door in Abstract Bistrot. Inspired by French bistros of old, drinks are served alongside counter dishes and sharing plates here.
