The subtly stylish interior, with its choice of comfortable sofas or front-row seats at the bar is dominated by dusky pink walls and a palm frond mural that evokes the sunset and ergo the sundowner: this is a place to unwind. Hildegard was founded by career bartender Thomas Pflanz and his close-knit bar team are constantly tinkering with their menu, coming up with new and exciting drinks that could be inspired by a favourite author, or even a specific song.
