The four Nymphenburg figurines representing each of the seasons that have stood in this restaurant since it first opened its doors in 1919 still give a vital clue to its philosophy. Tradition is a guiding principle – waiting staff wear jacket and tie ¬– but so too is seasonality. Learned chef Christoph Rüffer has been at the helm since 2002 and his five-course tasting menu combines long-established regional products with playful aromas and delicate plating. Every member of the kitchen team has a steady hand with tweezers. Many of the vegetables are grown in the restaurant’s own organic kitchen garden. The elegant dining room, which is tucked away in the Fairmont Hotel Vier Jahreszeiten, is a tranquil space with Chinese silk on the walls and views over Alster Lake.
