Sublime doesn't just celebrate Guatemalan cuisine, it looks to define it and to put this underrepresented country on the culinary map, at the same time as providing employment opportunities for its people. This mission is so pronounced that each dish in the seven-course tasting menu is dedicated to one of the country's seven regions as chef Sergio Díaz explores the countless indigenous ingredients created by Guatemala's varied terrain. As a result, he and his team produce dishes with a fantastic sense of place, including a shrimp, pepper, tomato, squash and mixed greens salad with a zapuyul dressing (made with oil from the South American pouteria sapota fruit tree) and caramelised pepitoria (powder made from roasted and ground ayote squash seeds).
