The moody stone-walled dining room at Flor de Lis lets chef Diego Telles' cooking shine. With a CV including a spell at Copenhagen's Noma, expectations are high, and we're happy to report that they are most definitely be met by his cooking. Presented as a tasting menu, which guests can either enjoy every course of or pick and choose, dishes are artfully arranged and incorporate both indigenous ingredients and molecular techniques for a unique experience. Dishes include a dessert of red, yellow and white flower petals in an orange and rosemary cream with a rose cookie and rose gel or a savoury course of chilli ash and amaranth toast stuffed with frog legs and giant ants both inspired by the K’iche Popol Vuh Reservas AKA the Mayan book of Creation.
