Inside, a minimal Scandinavian design scheme grounds the lofty space, which is located in one of the Fort neighbourhood’s most impressive neo colonial buildings (circa 1890). Awash in warm earth tones, the simple furniture and scarce wall decor create a feeling of hushed reverence for the culinary drama that follows. With a name that means “the one” or “unique”, the cuisine skews borderless, but the bounty of the diverse ecosystems of India and surrounding countries serves as the canvas for the cocktail programme, where stunning drinks illustrate the character of ingredients like jatamansi from Kashmir and Himalayan fir from Nepal, through to anantmool from Southern India.
