This Asia's 50 Best regular was credited with putting Fukuoka on the culinary map when it was founded by chef-owner Takeshi Fukuyama back in 2002. Expect the finest local ingredients in French-inspired dishes such as wagyu beef and Kyushu vegetables, mackerel with grapes and the signature prawn, shiitake mushroom and brown butter sauce, served with precision and scattered with petals. Although, best get there soon as Fukuyama plans to close the venue in 2020 to team up Gaggan Anand of four-time Asia's 50 Best winner Gaggan. The pair have spoken of a desire to open a new restaurant in Fukuoka.
