Set in the beautiful grounds of the zen Nanzenji Temple, Hyotei has been operating as a tea house for over 400 years. Chef Yoshihiro Takahashi now provides top-of-the-range kaiseki dining, driven by a desire to pass down a sublime take on Japan’s culinary heritage to a younger generation. His plates are light, bright and lacking in any sense of pretention – witness the signature dish, a soft-boiled egg, cut into two halves and served as a side, and probably the best egg you’ve ever tasted. Other highlights include the breakfast rice gruel, and a wine-marinated tilefish. And you haven’t really lived until you’ve had a two-course breakfast here comprising a large selection of tasting plates, including pickled vegetables, followed by a dazzling congee served with a miso sauce.
