Experimental mixologist Hiroyasu Kayama opened Benfiddich in 2013, though the intimate, eight-seater set-up is more akin to an apothecary than your typical bar. An expert in traditional elixirs, Kayama uses ingredients grown on his family’s land in Chichibu – including anise, fennel and wormwood – to create unique farm-to-glass cocktails. The shelves behind the bar groan under the weight of jars of fragrant spices and homemade infusions to be added to one of four spirit bases: amaro, whisky, gin or absinthe. For gin fans, the smoked G&T is a must.
