In true Tokyo style, Spirits Bar Sunface has no drinks menu. Instead bartenders here use conversation to glean the likes and dislikes of drinkers. Questions range from what type of alcohol is preferred to mood and palate. All in the aim of the perfect cocktail. Boasting a well-curated back bar and bottles shelved high around the room, this venue has a particular calling for tequila and owner Koji Esashi has been slowly amassing his impressive collection since opening. The bar itself is a stunning centrepiece made from a tree trunk and the stone walls keep the space moody and intimate.
