Getting to chef Eiji Tangiguchi’s remote Toyama prefecture restaurant is an adventure in itself, involving a two-hour drive from Toyama City, up through dense forest, around glassy lakes and alongside the Jinzū river towards the snow-capped Tateyama mountains. When you arrive, hungry, L’Evo’s nature-inspired menu of avant-garde, Gallic-Japanese interpretations of classic regional cooking awaits. Tangiguchi, who was born in Osaka into a family of chefs and has trained in French cuisine in Japan and France, feels a deep affiliation with his adopted home and the quality of the ingredients found across its rugged landscape. This is reflected in the close partnerships he’s built with the network of local farmers, brewers and winemakers who supply the restaurant. He also forages regularly for mushrooms and other ingredients in the surrounding woodland, which will later appear alongside locally sourced game in imaginative dishes served on L’Evo’s own crockery, designed by local artists, in the contemporary wood-and-glass-framed dining room.
