Standing Sushi Jinjin

Self-taught chef Izumi Kimura was a late starter to the world of sushi, beginning his chef career at the ripe age of 29 after experiencing a life-changing meal at Ginza Kyubey in Tokyo. The wait didn’t end there: the first two prototypes of Sushi Jin both closed. This third iteration is the best, bringing diners from as far afield as Tokyo to Kimura’s hometown of Toyama and its seafood-rich waters. Centred around the concept of Edo-style sushi, which is eaten while standing, Kimura’s hope was to create a place where diners feel comfortable dropping by casually as well as booking out for special occasions. The menu changes daily based on the catch of the day, but highlights include the grilled nodoguro and sakura trout sushi, made with rice grown locally by Kimura’s father-in-law, vinegar brewed in 100-year-old barrels and salmon from Hokkaido.
