Maryam ‘Mimi’ Al Nusif is a pioneer of Japanese food in Kuwait. Joining her existing ramen shop Tampopo, Bonjiri is Al Nusif’s latest venture in her quest to offer the people of Salmiya an authentic taste of Japan. On offer here is a range of yakitori, translated directly as ‘grilled bird’, a cooking style that traditionally uses all cuts of a chicken and sizzles them on a skewer over a traditional Japanese barbecue. Name any part of the bird and Bonjiri can, and will, grill it. Familiar strips of breast, thigh and drumstick are given equal footing on its menu, alongside lesser-seen cuts of tail, knee cartilage and tripe among other underappreciated and often disregarded parts of poultry. If you’re feeling overwhelmed by the choice, let Al Nusif and her team curate a selection of skewers for you. Bonjiri’s other offerings, such as the okonomiyaki (a savoury pancake), are equally faithful renditions of Japanese classics.
