The convivial Mar Mikhael restaurant evolved under the Souk el Tayeb umbrella, an organisation promoting small-scale Lebanese farmers and producers and the preservation of rural culinary heritage. Eschewing a menu, the concept is instead one of an all-you-can-eat, self-service lunch buffet, with the daily-changing cooks – many of them village women – on hand to talk diners through the dishes and provide context. Chunky wooden communal tables encourage discussion, which, more often than not, is about the food. Cookery classes are offered on the side.
