After establishing his Pavyllon concept in Paris, Yannick Alléno has once again worked his magic in Monaco with Pavyllon Monte-Carlo at Hôtel Hermitage. The acclaimed French chef was a natural choice for the property, where fine dining comes as standard. You’ll find a number of Pavyllon signatures on the menu, such as the Badaboum style egg with Oscietra caviar, smoked cream and eel toast, but the menu is rooted in Riviera flavours and produce, such as wood fire grilled blue tail lobster with ginger butter and sea bass aiguillettes, topped with a tomato syrup, capers and parmesan seasoning. When the sun dazzles across the district's glitzy hotels and casino, seat yourself on the terrace for sensational sea views.
