A culinary powerhouse, national treasure and beacon to sustainability, dishes are understated, creative and delicately balanced. Heidi Bjerkan, Norway’s first female Michelin-star chef, uses every trick in the Nordic canon. And provenance is key. To the extent staff can tell you from which of the six cows feeding the menu, your tartare, cheese and butter have come from. Cool, urban aesthetics – think graffiti, concrete floors and leather – provide the backdrop.
