Think you know fire cooking? Think again: Jaime Pesaque’s Sapiens takes fire-focused cuisine back to its elemental roots. Entering Sapiens is a little like breeching the gates of an underworld: a fiery, furious heath dominates the dining space, with grills specifically designed for meat, seafood, vegetables and rice splitting and sparking in the otherwise hushed and moodily lit restaurant. Above the feral flames, you'll spot hunks of dry-aged meat and smoke-imbued whole fish. Everything on the a la carte menu is fire-kissed – entrées of roasted aubergine and charred langoustines cloaked in chilli sauce, grilled duck chorizo, sweetbread, and chistorra sausage (a semi-cured chorizo), alongside Argentinian steaks. A selection of special courses includes gaucho-worthy platters packed with fire-driven flavours, such as flame-kissed seafood selections and grilled beef tenderloin with saltado sauce and corn rice. This is the fourth Lima restaurant from Pesaque, who also heads up Mayta, a regular on the World’s 50 Best Restaurants ranking.
