An essential stop for classic Nikkei cuisine in the capital of Japanese-Peruvian fusion, Shizen Restaurante Nikkei’s most popular plates include expertly prepared ceviches, udon noodle dishes made using Peruvian spices, and creative maki rolls, such as house-invented maki acevichado, which incorporates leche de tigre-marinated raw fish into a classic sushi roll. Despite their sophisticated plating, dishes at this sushi and cebichera bar have heart: co-founders and chefs Renato Kanashiro and Jorge Tomita draw on their Peruvian and Japanese heritage, pairing nostalgic flavours with knowledge gleaned from Le Cordon Blue Perú. Chef Mayra Flores brings Peruvian flair to the kitchen, infusing flavourful Creole influences from her childhood. Here, the aim is to showcase fresh, local ingredients, such as Peruvian silverside fish and sea urchin, with new dishes regularly added. Note the cocktails, too, which are imbued with Nikkei flavours such as fermented pineapple, koji and rum.
