Headed up by Anthony Zhong, who cut his teeth amidst the precision of the Tokyo bar scene, Shin Gi Tai is an ode to technique. There's a lot of method and very little madness in this Singapore speakeasy, which specialises in hand-carved ice and expertly crafted classics – its Negroni has developed a cult-like following. The whisky list is impressive and bar bites are similarly solid, with a menu of great drinking snacks, from gyoza to stuffed chicken wings.
