One of the pioneers of classic Slovenian fine dining, family run JB Restavracija is located in a 1920s secessionist building in downtown Ljubljana. Its focus on modern techniques and fresh, local ingredients from the city’s farmers’ market have garnered recognition, with the restaurant making the Top 100 in The World’s 50 Best list back in 2010. Chef owner Janez Bratovz says his menus are based on the four elements of earth, water, air and fire, representing sweet, salty, sour and bitter tastes.
