In keeping with the locale, seafood plays a major role across the multi-course menu, which is woven with global nuance and held together by technical know-how and the finest ingredients. It’s a contemporary example of fine dining that plays out over 11 dynamic courses. Nothing here is over-egged: from delightful amuse bouche – salmon, horseradish and dill – and tableside-poached oysters to smoked mussels with the paprika smoke of chorizo and umami of toasted yeast and tender crayfish tortellini with pork jowl and spiced coconut. A nitrogen-poached kalamansi appears to cleanse palates along the way. The pared-back, elegant dining room lets the dishes take centre stage, and presentation wise, stunning ceramics, vibrant colourways and creative decoration only add to the glory. Iconic wines are perfectly paired alongside, adding depth to what is a memorable culinary experience.
