One of two restaurants to be awarded three stars when Michelin launched its guide to the South Korean capital in 2017, Gaon has been a lynchpin of the Seoul fine dining scene since 2004. Meals are conducted in an elegant dining room with all the low-key tranquillity and silky-smooth service the accolade implies, and private dining for high-level client entertaining is a strength. Longstanding chef Kim Byung Gin crafts beguilingly simple dishes based on traditional Korean ingredients and technique within a classic tasting menu format. Shot glasses of soup and plates of canapés arrive ahead of cooking with a strong sense of national identity, including an entire course devoted to Byung Gin’s own version of kimchi, presented with all the ceremony you would expect of the national dish in this exalted setting.
