One of Seoul’s best Japanese-style bars, Polestar has all the hallmarks of a quintessential cocktail destination inspired by the likes of Tokyo and Kyoto, including the elegant glassware and the country’s zen bartending. It should come as little surprise that behind the concept is Japan’s own bartending champion Yoshifumi Tsuboi. Guests can spot plenty of his trophies hidden among the bar’s decor.
