Chef Shin Chang Ho’s restaurant within the The Plaza hotel aims to capture the spirit of Korea’s four seasons with cuisine that showcases the complexity of the country’s obsession with fermented sauces and vinegars. The chef’s collection of 30 vinegars not only makes it into his cooking but is suggested to be added to glasses of water, too. Pride of place goes to perilla oil pressed from seeds harvested in the vegetable garden of the chef’s mother-in-law’s in Jinju – a refreshingly homely touch typical of a restaurant that manages to balance friendliness with formality. Even without the vinegars, however, Ho’s cooking of impeccably sourced ingredients displays an alluring depth of flavour. The hotel location dictates a rather bland dining room, but well-spaced tables mean that nothing will disturb your enjoyment of the meal.
