Chef Jun Lee has had a fascinating career path thus far – training at The Culinary Institute of America where he gained the nickname Soigné for his immaculate appearance, he graduated into a position in the kitchens of Thomas Keller's Per Se, before working his way up in both Toronto and New York, then returned to Seoul to launch a series of pop-ups, opening Soigné in 2013 on the backs of their success. In the intervening decade Lee has implemented all that he had learned and created this acclaimed destination, quite unlike anything else in the city. Soigné's dishes are clearly informed by Lee's global experience and rigorous training, presented in exquisite 14-course tasting menus. His signature Iberico pork dish is a perfect example, with the pork cooked in seasoned dough to retain its moisture (a classic Korean technique), then served with shishito pepper purée and a pork and shishito broth to cut through the meat's natural richness.
