The first American producer of Korean drink soju has taken up residence in Seoul’s Ryse Hotel, creating an estate bar, meaning that all of its spirits are made in house. Tokki Soju or Sonbi Gin are the base, therefore, of all of the drinks at Tokki Bar, such as the No 024, with the gin paired with a curry cordial containing pandan and curry powder, coconut water and citrus stock, all given a rounded mouthfeel using nitrogen. The bar itself is inspired by the neighbourhood bars of Brooklyn, with dim lights and plenty of wood. The food takes its inspiration from there too, featuring dishes that draw on Italian-American cuisine. The bathrooms here are particularly noteworthy, with a light installation that has to be seen to be believed.
