Its name an abbreviation of “densho”, the Japanese word for “legend”, the 2020-opened Sho is an offshoot of renowned Tokyo restaurant Den – the first outside of Japan. Young car mechanic-turned-chef Shouichi Fujimoto is at the helm, bringing the skills he honed training under Zaiyu Hasegawa at Den for five years to Taiwan. Working out of a cutting-edge open kitchen in Sho’s tranquil, spartan dining room, Fujimoto is responsible for the restaurant’s single tasting menu, offered with a five-strong alcohol or tea pairing. Precise dishes made with top-quality fresh produce include two the chef brought with him from the Den menu: a flavour-packed green salad of more than 10 different kinds of vegetable and kamameshi, a traditional rice dish cooked in an iron pot called a kama – legends, both.
