The phrase ‘what’s in a name’ doesn’t apply to this intimate spot, which has been a darling of Taiwan’s well-heeled creatives since it opened in 2017. The portmanteau word ‘Taïrroir’ refers to chef Ho’s childhood memories of growing up in Taichung, his experience at leading French restaurants such as Odette in Singapore and his passion for ingredients with provenance, a philosophy embodied by the French word ‘terroir’. Nine-course tasting menus are a feast for the senses, with a signature dish of mashed taro and sakura shrimp making a pleasing popping noise when mixed into confit egg yolk tableside. The cloud of 1,876 copper tiles that glint from the ceiling may be quite the spectacle, but even they can't overshadow this food.
