Sitting above Farringdon pub, The Three Compasses, Bouchon Racine is the latest offering from chef Henry Harris and co-owner Dave Strauss, after Harris closed his much lauded Knightsbridge restaurant Racine in 2015. While Racine focused more on dishes from Paris, Provence and the south-west of France, Bouchon Racine indulges Harris’ love of Lyon, or rather the city’s convivial bouchons, where Lyonnaise ingredients are celebrated in simple but hearty dishes. Despite its London location, the restaurant has even earned a spot as a member of the Association Authentiques Bouchons Lyonnais. Signature plates are based on the classics , such as Bayonne ham and celeriac remoulade, grilled rabbit, smoked bacon and mustard sauce; tête de veau with sauce ravigôte; calf’s brains, black butter and capers; crème caramel; and Agen prunes in Armagnac. Naturally it's all complemented by a French-focused wine list.
