After meeting at London’s pioneering but now shuttered Nahm, Andy Oliver and Mark Dobbie continued to sharpen their Thai cooking skills in the kitchens of Bo.Lan in Bangkok (Oliver) and Pok Pok New York (Dobbie) before going it alone with Som Saa in London’s Spitalfields in 2016. The pair has since followed up with Kolae, a grill concept which takes its name from the Southern Thai style of cooking where ingredients are generously coated in a curry-like coconut marinade before being cooked over open flames.Although chicken is usually the most common ingredient, the signature dish here is the Kolae grilled mussel skewers with calamansi lime. As a great Thai meal is all about balancing chilli heat with cooling fresh flavours, opt for the set menu to see how Kolae does it, accompanied by a selection of organic, biodynamic and natural wines specifically chosen to complement the food.
