Wherever he might cook, Argentinian chef Mauro Cologreco is fully tapped into the local terroir - cuisine at his former No.1 ranked Mirazur is based around the chef’s biodynamic French Riviera gardens - so it’s no surprise that he has fully immersed himself in British ingredients and seasonality at his signature restaurant at Raffles London at The OWO. The chef and his team spent an impressive two years getting to know UK produce and producers before the restaurant’s launch, resulting in a menu that shows off more than 70 fruits and vegetables found across the British Isles. Dishes showcase a single seasonal speciality, such as Jerusalem Artichoke, seved with hazelnut and cornish monkfish, or the signature Lettuce, which brings together red oak lettuce sourced from an urban farm in London's Elephant and Castle with smoked haddock, sesame chips and a vermouth and cockle sauce. Other highlights include the cheese trolley with seasonal compotes, a wine pairing inspired by British explorers, and the Pain de Partage, based on a recipe from Colagreco’s grandmother and now given a British twist with local flour.
