In between being a trained lawyer and spreading her love of low-waste, plant-centric food with guests at Soneva resorts through global culinary pop-ups, chef Chantelle Nicholson somehow found time to open Apricity. Vegetarians – and conscious carnivores and pescatarians – will be rejoicing that she did. Apricity’s elegant cuisine champions local, seasonal produce sourced from trusted suppliers, resulting in playful, inventive dishes that read like mini love letters to your five-a-day. Everything sounds intriguing, with a generous dash of whimsy: starters of marinated Sussex tomatoes with cashew ‘cheese’ and pickle granita, or hand-dived Loch Fyne scallops with taramasalata and apple ketchup. These kinds of creations have garnered a Michelin Green Star. A similar spirit informs the relaxed, sustainable decor, courtesy of Object.Space.Design: all peeling, exposed walls, recycled wooden flooring and simple furniture. Wondering about the name?
